"Organic raw garlic (Allium Sativum L) that has not been treated with pesticides or chemical fertilizers, presented either whole (bulb) or peeled (cloves). After a fermentation process without any additives, preservatives or any other ingredients, the garlic acquires a soft, gummy aspect, black in colour, eliminating the characteristic smell and taste making its consumption much more pleasant. The flavour is a mixture between sweet, balsamic and syrupy with hints of liquorice, also known as the “umami” taste. Product available all year round. The antioxidant properties of raw garlic are increased considerably with the fermentation process. Black garlic not only has all the properties of raw garlic (antibiotic, antiseptic, good for defenses, fungicide, diuretic, expectorant, etc.) but it also has additional benefits, fibre and a higher polyphenol content. It contains 18 amino acids including glutamic acid and lysine."
