A FAMILY LAND
A land cultivated since 1818 by the Villén family with a very characteristic limestone soil with a strongly marked orography, along its 300 hectares and its more than 24,000 olive trees.
CENTENNIAL OLIVE GROVES
Our family treasure. A centennial and sustainable olive grove, made up of 80% of the hojiblanca olive variety and 20% of other varieties such as the picual and the picuda. Undoubtedly, an exceptional mix that allows as create a supreme quality Extra Virgin Olive Oil. Located in the heart of the Sierras Subbéticas Natural Reserve in South Spain (Andalusia) our olive groves are under privileged conditions of altitude, orography, rainfall and thermal oscillations. This favorable situation combined with our agricultural expertise, makes it possible to obtain a unique fruit that allows us to produce unique and highly recognized EVOOs worldwide.
OUR SPECIAL FARMING PROCESS
We use the no-till technique, with the aim of respecting the environment and making the best possible use of the moisture and organic matter for a sustainable soil. This is also possible thanks to the action of the vegetation layer that covers it. This vegetal cover serves as a water and food source for our olive trees. In addition, we incorporate the crushed pruning layer that results after all this process as well as other usable crop residues from the oil mill to contribute to the enrichment of the plant cover where it does not exist too.
In short, we carry out a circular agriculture process that helps preserve our environment. To obtain the highest quality grade in our oils, we carry out an early harvest of the fruit at the beginning of October. It is in October when the olives are at their best. Once the olives are harvested, they are transported for the next four hours to our own family mill. We keep the transportation time as short as possible with the aim of making the most of the properties of the freshly harvested olive fruit. Then, our EVOO will be kept in our family cellar with a controlled temperature until the product is sold and enjoyed by you.
